Hell week- 0, Renee-1
Yep, hell week is over- and I think I won. Got my final grade for Anatomy & physiology 1- A!! Now- 2 job interviews this week and the start of A & P 2! Yippee! :?

Tuesday Tunes
I kinda need something to pump me up for the next week- 8 chapters to read, 4 quizzes to take, one written Final Exam, one Lab Practical Final exam, one Unit test & a depressing day to get through- all by next Friday! Whew- then, I'll be one step closer to a new, better life & another new beginning!

Her Day
Today was Emma's 12th Birthday.

We spent a lot of last night and this morning talking about her entrance into this world- how she was so ready to be here...
I told her over and over how much she means to me and how much I love her, and how she has changed my life.

She wanted to get a birthday pedicure- so her best friend and sister and I got one....
I have so many thoughts on this day, and the last 12 years and 8 months of her presence in my life...
I love you MY Emma boo!!!

The taste of summer

Fruit Salsa with Baked Cinnamon Chips

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 (16 oz) carton of strawberries, diced
2 tablespoons white sugar (more or less to taste)
1 tablespoon brown sugar (more or less to taste)
3 tablespoons fruit preserves, any flavor (I used strawberry)
10 (10 inch) flour tortillas
melted butter or butter flavored cooking spray
2 cups cinnamon sugar
1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2.Preheat oven to 350 degrees.
3.Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter).
4.Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. Best when made and eaten the same day otherwise the fruit gives off so too much juice and it gets runny.
